Through space shaping she strives to facilitate memory making, a celebration of sustainable living and “the way thing’s used to be”. At the intersect of her passions for sustainable agriculture, seasonal eating, heartfelt hospitality, and creative community based events, lies The Waterford Inne.
You will find her in the garden, likely barefoot and shielded by a straw hat, her hound dog Milo, not far. In the kitchen, talking about this week’s harvest and the menu. Or behind the bar, sketching out a new cocktail inspired by the garden.

Greta thrives when taking on new challenges, never shying away from a project, and always giving her best. She is likely the voice on the other side of the phone, or the one greeting you at door when your arrive. Greta finds joy in meeting new people, whether they're staying at the inne or enjoying a meal at Tallulah’s, and she takes great pride in making sure each guest feels at home. Her goal is to create a memorable, curated experience for every guest, one that’s built on exceptional service, attention to detail, and a warm, welcoming atmosphere.
You’ll find Greta tending to the inn's chickens, or with a tool in hand building or fixing just about anything that needs tending.

Brandon Montes

Intimate tasting menus, ethical sourcing and the utmost curated culinary experiences is the world in which Brandon relishes. These experiences and vast inspiration gained are the kindling for the fire he currently cooks over.
With the utilization of our beautiful farm, a spotlight is shined on the produce that is perpetually harvested throughout the year, along with a strong focus on indigenous ingredients, sustainable wild foods, and invasive species coming from both our woods and oceans.
Fermentation, preservation, investigation, and longevity through community are what deeply roots the food systems he will create for seasons to come.
When not in the kitchen, you will find Brandon foraging in the woods, or on the Maine coastline.
